Sobremesa is a family-run fermented foods company located at Wild Rhythms Farm in Marshfield, Vermont. They specialize in creating delicious fermented foods such as kimchi, sauerkraut and seasonal products from their own and other Vermont farmers’ vegetables and herbs.

Sobremesa was founded by husband and wife team Jason and Caitlin Elberson in 2014. They began by selling vegetables at the Winooski Farmers Market that summer, then expanded to selling naturally fermented foods over the winter. After moving to Marshfield, they converted a space in their barn to create a state-inspected kitchen. They grow a small amount of produce on their own land and purchase produce from local organic farmers including Full Moon Farm, Pete’s Greens, Bear Roots Farm, Friends & Neighbors Organic Farm, Last Resort Farm, Jericho Settlers Farm, Maple Wind Farm and Half Pint Farm. Sobremesa’s mission is to produce high-quality raw vegetable ferments using organic Vermont produce, enabling Vermonters to eat local inspiring food year-round.

Sobremesa came to the VFF for a loan after they were approached by a number of new wholesale accounts that they were unable to accommodate. The loan allowed them to purchase jars and labels for packaging, apply for organic certification, and purchase more produce direct from VT farms to increase their production.
